Instructions
Things You'll Need:
- 4 giant (or jumbo) scallops
- Salt and pepper
- 2 tbsp. olive oil
- 1/4 cup rosemary
- 1 lemon, halved
Step 1
- Rinse scallops under cold water and pat dry with paper towel.
Step 2
- Sprinkle salt and pepper on both sides of scallops.
Step 3
- Place large skillet over high heat. Allow skillet to heat so that it's perfectly hot before you add scallops.
Step 4
- Combine olive oil and rosemary into medium bowl and mix.
Step 5
- Squeeze both lemon halves into oil and rosemary mixture. Stir well.
Step 6
- Add scallops to oil mixture and move around until completely covered.
Step 7
- Place scallops in skillet and cook, searing for 4 minutes on each side. When done, scallops will be crispy and brown on both sides, but soft and juicy in the middle.
Step 8
- Place on paper towel to drain oil and serve.
Tips And Warnings
- Tastes great with vegetables or rice.
- Add spicy seasoning for a Cajun flavor.
- Overcooked scallops can be tough to chew.
